HONJOZO-SHU

Honjozo is sake to which a small amount of brewery's alcohol has been added to Junmai. This is added near the end of the fermentation process just before filteration. Honjozo-shu is generally lighter than Junmai. Ideally, it should be enjoyed at room temperature or warmed. The brewery's alcohol has the bonus effect of bringing out the aroma of sake quite nicely.
