NAMA-ZAKE & TARU-ZAKE

Nama-zake is sake that has not been pasteuraized. Usually, sake is pasteurized twice, once just after brewing and once before bottling.                                   

Taru-zake is " Cask " or " Barrel " sake, that is, sake aged in cypress barrels.
